Bowl of traditional fried smelt in Skived, Värmland. This is the way most local people still prepare smelt. The dish is eaten for lunch or dinner with mashed potatoes and cowberry (Vaccinium vitis-idaea) jam. If you have plenty of small smelt, you can press them together into a pancake shape, fry, and eat them in the same way (photo Katharina Leibring 2014)
