Fireboxes to bake laxoox/canjeero. a Firebox known as girgire in Hargeisa. b Firebox known as burjiko in Mogadishu. Fireboxes hold hot charcoals that heat the cast iron griddles from underneath. Before the advent of fireboxes, laxoox/canjeero was commonly cooked over wood fires on the ground.
